This weeks cookbook challenge is potato, and I admit I was stumped for a minute.  The only potato dishes that came to mind are quite boring and wouldn’t photograph well.  I wanted to do something a little more interesting. The result is this very tasty stack.  I made a variation of this dish with bacon, avocado and tomato for the little kids which they loved.

Rosti Ingredients:

5 Potatoes

1 Onion

¼ Cup Flour

2 Eggs

Salt and Pepper to taste

1 clove Garlic


Use a food processor to grate the onion and potato.  Squeeze out the excess liquid.  Add chopped garlic, flour, eggs, salt and pepper to taste.  Mix with a fork.

Heat the oil (1cm deep) in a frying pan with a solid bottom. Form nine balls and flatten in your hand as you place them into the oil. Flatten again with a metal egg flip.  Leave the rosti until golden and well cooked. Turn to cook the other side. Drain on absorbent paper.

Rosti Salmon Stack:

6 slices of Smoked Salmon

½ Cup Yoghurt

1 T/s Chopped Dill

2 T/s Finely Chopped Cucumber

1 T/s Lemon Juice

½ Sliced Avocado

2 t/s Red Caviar


Combine the yoghurt, dill, lemon Juice and cucumber in a bowl.

Starting with a rosti, layer smoked salmon, yoghurt and avocado until you have three rosti’s. Finish with a rosti and then add some yoghurt, avocado and caviar to garnish the top.

    They look great! I’ve attempted rosti only once before, and tried to make a healthy version by cooking them on a flat electric grill instead of in oil, and they weren’t great, kind of cakey.

    After seeing your pics I need to give in and cook them the unhealthy (and delicious!) way
