Prunetastic Slow Cooked Beef Spare Ribs + Giveaway Winners

It is time to announce the winners of our Prunetastic giveaway!
Before I do, I want to share one last recipe with you using the delicious healthy Sunraysia Prune Juice.

This recipe gives the chain “Stetsons Steakhouse Saloon” a run for their money. The sauce is rich and delicious and the meat just falls off the bone. I chose to use beef so as to minimize the fat content, but you could go your hardest and choose mouthwatering pork spare rib for the recipe.
Slow Cooked Beef Short Ribs
Ingredients
1.8kg Beef Ribs
250ml Sunraysia Prune Juice
250ml Teriyaki Sauce
250ml Campbell’s Real Beef Stock
4 cloves garlic

Method
Marinade the ribs in a mixture of prune juice and Teriyaki sauce, cover and allow to stand overnight in the refrigerator.

Place the ribs, garlic and sauce into either a casserole dish or slow cooker.

Cover and cook in a slow cooker on high for six to eight hours, or until the meat comes away from the bone. If cooking in a covered casserole dish cook at 160 degrees for about 3 hours.

Once the meat is cooked remove it from the dish and set aside in a warm place. Pour the marinade into a saucepan and boil it on the stove until it reduces to a delicious syrup. The sauce is served over the meat.

A Prunetastic Giveaway

I am wondering how many of my readers made New Years resolutions this year. At the start of the year I set myself a few goals. As with any goals I think that it is always good to review my success or failure and perhaps look at ways I can improve my success. I also like to look at the relevance of the goals down the track. Is this still what I want? If the answer is yes then I need to make an added commitment to the goal.
In January the cancer council advertised on my website. Part of the advertisement was a survey to assess your risk of cancer. I decided to participate in the survey because good health is important to me. My last birthday was the big 40 so I am more conscience of maintaining what is left of a youthful appearance and not declining in health or vitality.
After completing the survey I was sent an email recommending the changes I should make to my lifestyle. On the whole I did very well. It did however highlight to me the big deficit in my diet. I don’t get time to eat fruit and drink water. So these are the goals I set myself for the year.
My Goals at the start of the year
Eat 2 serves of fruit per day
Increase my consumption of water to at least 2 glasses
Exercise 3 times per week
Wear sunscreen in Summer
I have to admit that I still struggle with my two serves of fruit per day. I enjoy fruit but I am always on the run and don’t get time to snack through the day. Thanks to my awareness of the need to eat more fruit I have increased my consumption, but I hadn’t reached my goal yet.

When I find a great product, packed with nutritional value I tend to experiment in the kitchen for more uses. Prunes, like figs, and rhubarb seem to have been a bit of a forgotten hero. They were used and enjoyed by the previous generation and are now coming back into favour due to the new found health benefits of the food.
I have devised some delicious recipes using Sunraysia Prune Juice. I will feature these in the coming week but here is a sneak peek.

State of Origin night is the ultimate pizza night, I am told that it is one of the biggest night on the Domino’s calendar aside from the NRL Grand Final itself.
Tonight we will be jumping the franchise pizza queues and having a Gourmet Pizza Party.

The final pizza on the menu was a Chili Vegetarian w Sundried Tomato & Feta Pizza. I seem to have missed photographing this one too... I will just have to blame the excitement on the night and assure readers that all the pizza's were delicious.

Plus we also had a which I missed photographing. I will have to make it again because it was delicious and I would love to share the recipe with everyone.
Caramel Pear & Macadamia Pizza with Ice-cream
I was so pleased with the delicious range of flavours everyone came up with for the Pizza Party. The Bakers Delight bases were the perfect vehicle for these lush toppings. I loved the fact that the bases are pre-cooked as this meant each pizza was in and out of the oven in 7-8 minutes.

After all, we had some hungry blue’s supporters to feed… (and two Maroons), so the cooking time was a real bonus, nobody wanted to miss kick off!

Alas it doesn't look like Im in contention to be the winner, but I can assure you the pizza is delicious and everyone should make a dessert pizza once in a while. Creamy Garlic Prawn and Fresh Herb Pizza + a GIVEAWAY

Today on the third day of pizza I have prepared a heavenly creamy Garlic Prawn & Fresh Herb Pizza served with lemon. This is more than your average prawn pizza. I have included a cheese sauce base and a few other little surprises to give the pizza a real zing!
Follow along and let the salivating begin…

Ingredients:
1 Fresh Bakers Delight Pizza Herb and Garlic Base
1/4 cup Dolmio Lasagna Cheese Sauce
3 Tbs Seafood Sauce (swirled on base… see pic)
1/2 cup grated Parmesan cheese
¼ cup chopped shallots
¼ cup chopped parsley
200gm garlic green prawns (deli counter at Woolworths)
chopped dill
chopped parsley
1 lemon sliced
Method:

Spread the pizza base with the cheese sauce.
Add a spiral swirl of seafood sauce to the base.

Scatter the shallot and parsley evenly over the pizza
Add the grated cheese ensuring even coverage.

Scatter the prawns over the pizza, don’t over crowd.
Bake at 220 degrees for 7 minutes.

Remove the pizza from the oven and add more fresh herbs and a squeeze of lemon.

Serve and enjoy!
This pizza is quick and absolutely mouth wateringly delicious. It will be featuring on my Pizza Party menu for the State of Origin.

Smokey Steak & Cheese Pizza w Sweet Caramelised Onion + a GIVEAWAY

“On the second day of Pizza my true love said to me… S-m-o-k-e-y Steak Cheese…. Caramelised onion, Rosemary and Brie…” and a partridge in a pear tree… okay maybe I’ve gone a little carbohydrate mad but you get the picture, I'm fa la la ing while I make a Smokey Steak & Cheese Pizza with Caramelised Sweet Onion.
Now this is the most divine pizza ever, even if I do say so myself, (there’s that modesty coming out again.)
Anyway, this was going to be a Wagyu & Brie Pizza with Caramelised Onion but I hit a snag getting the Wagyu at short notice. Thankfully the guys at Russell’s Quality Meats in the Plaza fixed me up with some gorgeous Dorrigo eye fillet, cut super thinly in little rounds. Even though it wasn’t Wagyu the beef just melted in the mouth.
I am a huge fan of the Bakers Delight bases; because they are pre cooked this pizza spent only 6-7 minutes in the oven. This allowed the steak to stay incredibly moist and tender.

Ingredients:
1 Fresh Bakers Delight Pizza Herb and Garlic Base
1/4 cup Smokey BBQ Sauce
1/2 cup grated cheese
2 sprigs rosemary
½ cup caramelised sweet onion
8 thinly cut slices of eye fillet steak
5 slices of Brie
½ cup rocket
Caramelised Sweet Onion:
Ingredients:
3 Onions sliced into rings
1 Tbs Olive Oil
1 Tbs Butter
1 Tbs Brown Sugar
1 1/2 Tbs Brandy
Sweet Onion Method:

Melt butter in saucepan with oil, onion, and sugar. Stir until coated with oil.
Cover and sweat on a low heat for 10 minutes stirring regularly.
Uncover pan and continue to cook and stir until caramelised, approx 10 minutes. Deglaze with Brandy and cook over a low heat until evaporated.
Pizza Method:

Spread the pizza base with barbeque sauce.

Add the grated cheese and rosemary to the base ensuring even coverage.

Scatter ½ cup of caramelised sweet onion over the pizza.

Place the steak rounds on the pizza where each of the eight slices will be cut from.

Bake at 220 degrees for 7 minutes.

Remove the pizza from the oven and add slices of brie.

Serve with Rocket and enjoy!

I have made this pizza before on a homemade pizza base. The flavour was awesome but the base did not handle all the liquid from the barbeque sauce, steak and caramelised onion. Berry Delicious Breakfast Pizza w Vanilla Mascarpone + a GIVEAWAY

Now it is time to get down to the business of sampling the new fresh pizza bases sent to me from Bakers Delight. I decided to use one of the plain bases to make this yummy sweet pizza. I hope the picture and recipe inspires you to create some gourmet pizza's of your own.

The first thing I noticed about the bases is that they are quite thick. I decided to make good use of this volume by adding some toppings that may perhaps have too much liquid for a regular pizza base to handle.

The bases have also been pre baked at Bakers Delight which allowed me to create this delicious Berry Pizza without fear of the fruit becoming over cooked or the base becoming soggy.

Ingredients:
1 Fresh Bakers Delight Pizza Base
1/4 cup Strawberry Jam
1/2 punnet chopped strawberries
1/2 cup frozen blueberries
1/2 cup frozen mixed berries
1/2 teaspoon caster sugar

Vanilla Mascarpone Topping:
100gm Mascarpone
1 teaspoon vanilla extract
1 Tablespoon icing sugar
Method:

Spread the pizza base with strawberry jam.

Add the fruit to the base ensuring an even coverage.
Sprinkle the caster sugar over the fruit.
Bake at 220 degrees for 7 minutes.

Meanwhile mix the Vanilla Mascarpone ingredients together and set aside.
Remove the pizza from the oven and drop teaspoons of the mascarpone onto the pizza.
This is the most deliciously fresh tasting pizza, it is loaded with fruit and makes a really quick “special” breakfast. I usually serve it with more fresh strawberries and mascarpone.

The Bakers Delight pizza base suited this pizza perfectly. I love that the pizza was ready for eating after only seven minutes cooking time. This is a drastic reduction to the time it would usually take to cook pizza.
The fresh Bakers Delight Pizza Base lifted this pizza to a gourmet status. The fruit remained fresh and lush and the addition of the creamy vanilla mascarpone to the finished product was sublime.

Bakers Delight Pizza Competition

I received a lovely surprise this morning. A courier arrived with a tasty package from Bakers Delight. In case you didn’t know Bakers Delight has released a range of Fresh Pizza Bases for those of you who enjoy making your own gourmet pizza.
Since this delicious package arrived it has been sitting on my desk as I write, teasing me with that lovely fresh baked bread aroma. I can wait no longer… I need to create a pizza! I have decided to dedicate the following week to a Baker’s Delight Gourmet Pizza week.
My delivery included two plain bases and two herb coated bases so this suggests to me that I should make two savoury pizza’s and two sweet dessert pizzas. Also included in my little parcel were 5 x $5 gift vouchers to giveaway to my lovely readers.

I have two savoury pizza’s that I always make for my friends and family. The first is a Smoky Steak & Cheese with Caramelised Sweet onion and the second is a good old Garlic Prawn & Fresh Herb Pizza.

My two favourite sweet pizza’s are a Berry Delicious Breakfast Pizza served with fresh strawberries and vanilla mascarpone and a Caramelised Pear & Macadamia Dessert Pizza with a Praline Crunch.

I will be showcasing these pizza’s and of course sharing the recipes on this site over the next week and asking that you come up with your own pizza creations.

High Tea & Fashion Parade with the Girls

I would love everyone to join Gourmet Getaways at the Early Intervention High Tea & Fashion Parade. The event is being held on Sunday 18th September at Novotel Pacific Bay Resort in Coffs Harbour.
Ladies will be treated to an exquisite high tea with delicious array of sweet and savoury dishes whilst enjoying a spectacular fashion parade. Fashion retailers such as Nik & She, Inza, Sensara & Jacqui’s Shoe Boutique will be previewing their spring fashions on the catwalk. Parry’s Jewellers will also be showcasing their funky Thomas Sabo range of jewelry.

This is going to be one of those great girly days. There will be a silent auction with an array of gorgeous items for ladies to bid on. On a serious note the event is being held to raise funds for Coffs Harbour’s Early Intervention Centre. Early Intervention is an organization which employs physiotherapists, occupational therapists, speech therapists and early childhood educators to assist children with developmental delays. The service is free to families, and provides concentrated need based therapy prior to school. This therapy assists children in reaching their full potential in life.
This is the second year that Deborah from Parry’s Jewellers has co-ordinated this great event. Tickets are $45 and can be purchased at any of the local businesses listed below.

The Cadbury Mousse Chocolate Winners

The first winner has to be Amanda Elizabeth who commented that her Cadburys is perfectly safe in her daughters bed because she won't sleep by herself and sleeps with her. I think she may need some extra energy to get through the day. ALL my children slept in my bed as kids! She also emailed me a picture of her real life bunny guarding her stash of Cadbury Easter Eggs!

Rhubarb Whine June 3, 2011If I am lucky enough to get the block hidden before anyone knows I have one, it goes in the wok - no one ever looks in the wok and I am the only one who uses it for cooking. But if someone sees the chocolate come into the house, I 'hide' it behind the cookie jar. Of course, everyone KNOWS that's where I hide it, behind that cookie jar, so when they look for my stash and there's none behind the cookie jar it means I don't have any, right? Right? RIGHT?

Cadbury Dairy Milk Mousse Chocolate Giveaway

I trust that my chocolate loving readers have noticed that Cadbury's have released a range of Mousse Dairy Milk chocolate in three delicious flavours. Wouldn't you agree that there is something so “right” about curling up on the lounge, in front of television in winter, with a family sized block of Cadbury's chocolate all to yourself?
Which is why I also love the new advertising campaign, “Chocolate so delicious it's best kept hidden." I had recently noticed that if my chocolate isn't hidden there is never any left for me!
In my house treats such as chocolate have a way of simply disappearing, never to be seen again? I've had to be very ingenious when it comes to hiding chocolate. Hubby is 6”6’ so a hiding spot high up is out of the question. The teenagers know exactly where things are kept in the pantry and everything is in open view. The little ones can now open the fridge, and the middle of the fridge is at eye level. It seemed I was doomed to never have more than a square of chocolate.

Then one day, whilst cleaning out the very bottom of the fridge, (where the vegetables go to die) I noticed an unopened block of chocolate had slipped into the nether regions of the crisper, (what an ironic name). I had stumbled upon the ultimate secret hiding spot! I now ensure that a bag of slimy lettuce stays in the bottom of the fridge to act as a deterrent, and as yet my stash of chocolate has never been discovered.
Now please don’t get me wrong, I am not a horrible mother and wife, I wouldn’t mind sharing my chocolate. The problem is, sharing is not on the minds of the rest of the family, their goal is to consume, and then search for more.
My task now is to find a way of getting some of that "me time" so that I can enjoy my Cadbury Mousse Chocolate.

I wish I had you for my mum when I was 5!

Yellow strawberries and cream is just perfect for mum as a reward for putting up with two kids who were a pain in the bum.

It shouldn't. It should go to me as whilst trying to make sure my mum, step-mum, MIL, Step-MIL, 3 x Grandmas are spoilt on Mother's Day, I always seem to get forgotten!
My poor old mum is battling to care for my step dad who has advanced Parkinsons. My real dad who has had a stroke still expects her to be there for him, my bro is going bankrupt and she lives two states away from her only gransdon. Her life has little joy- JUst wish for one thing nice to happen to her. We all love our mums, good luck to you all!
Perfect place to relax and forget about all the troubles we have in the city and just unwind ~ can't wait to go to somewhere like this hehe
