Smokey Steak & Cheese Pizza w Sweet Caramelised Onion + a GIVEAWAY

Smokey Steak & Cheese Pizza w Caramelised Onion

“On the second day of Pizza my true love said to me… S-m-o-k-e-y Steak Cheese…. Caramelised onion, Rosemary and Brie…” and a partridge in a pear tree… okay maybe I’ve gone a little carbohydrate mad but you get the picture, I'm fa la la ing while I make a Smokey Steak & Cheese Pizza with Caramelised Sweet Onion.

Now this is the most divine pizza ever, even if I do say so myself, (there’s that modesty coming out again.)

Anyway, this was going to be a Wagyu & Brie Pizza with Caramelised Onion but I hit a snag getting the Wagyu at short notice.  Thankfully the guys at Russell’s Quality Meats in the Plaza fixed me up with some gorgeous Dorrigo eye fillet, cut super thinly in little rounds. Even though it wasn’t Wagyu the beef just melted in the mouth.

I am a huge fan of the Bakers Delight bases; because they are pre cooked this pizza spent only 6-7 minutes in the oven.  This allowed the steak to stay incredibly moist and tender.

Bakers Delight Pizza Base

Don’t forget I have some $5 Bakers Delight vouchers to giveaways to readers who are interested in making their own gourmet pizzas. Look for the question at the bottom of the recipe for your chance to win one.

Ingredients:

1 Fresh Bakers Delight Pizza Herb and Garlic Base

1/4 cup Smokey BBQ Sauce

1/2 cup grated cheese

2 sprigs rosemary

½ cup caramelised sweet onion

8 thinly cut slices of eye fillet steak

5 slices of Brie

½ cup rocket

Caramelised Sweet Onion:

Ingredients:

3 Onions sliced into rings

1  Tbs Olive Oil

1 Tbs Butter

1 Tbs Brown Sugar

1 1/2 Tbs Brandy

Sweet Onion Method:

Caramelised Sweet Onion

Melt butter in saucepan with oil, onion, and sugar. Stir until coated with oil.

Cover and sweat on a low heat for 10 minutes stirring regularly.

Uncover pan and continue to cook and stir until caramelised, approx 10 minutes. Deglaze with Brandy and cook over a low heat until evaporated.

Pizza Method:

Smokey Steak Pizza

Spread the pizza base with barbeque sauce.

Barbeque Pizza

Add the grated cheese and rosemary to the base ensuring even coverage.

Smokey Barbeque Pizza

Scatter ½ cup of caramelised sweet onion over the pizza.

Smokey Barbeque Pizza

Place the steak rounds on the pizza where each of the eight slices will be cut from.

Smokey Steak and cheese pizza

Bake at 220 degrees for 7 minutes.

Smokey Barbeque Steak

Remove the pizza from the oven and add slices of brie.

Smokey Steak and Cheese Pizza

Serve with Rocket and enjoy!

Smokey Steak & Cheese Pizza with Caramelised Onion

I have made this pizza before on a homemade pizza base.  The flavour was awesome but the base did not handle all the liquid from the barbeque sauce, steak and caramelised onion. The Bakers Delight pizza base suited this pizza perfectly as the thick par cooked base was the perfect vehicle for such a lush moist pizza.

Give this pizza a try at home, I promise you will fall in love. The Bakers Delight Pizza Bases are available in a two pack at your local Bakers Delight store for only $4.50.

Berry Delicious Breakfast Pizza w Vanilla Mascarpone + a GIVEAWAY

Posted July 4, 2011

Bakers Delight Berry Delicious Pizza

Now it is time to get down to the business of sampling the new fresh pizza bases sent to me from Bakers Delight. I decided to use one of the plain bases to make this yummy sweet pizza.  I hope the picture and recipe inspires you to create some gourmet pizza's of your own.

Just in case you do get inspired don’t forget I have some $5 Bakers Delight vouchers to giveaways to readers.  I want to know what gourmet pizzas you will make with your base. Check out the details at the bottom of the page to enter.

Bakers delight gift vouchers

The first thing I noticed about the bases is that they are quite thick.  I decided to make good use of this volume by adding some toppings that may perhaps have too much liquid for a regular pizza base to handle.

Bakers Delight plain pizza base

The bases have also been pre baked at Bakers Delight which allowed me to create this delicious Berry Pizza without fear of the fruit becoming over cooked or the base becoming soggy.

Berry Delicious Pizza

Ingredients:

1 Fresh Bakers Delight Pizza Base

1/4 cup Strawberry Jam

1/2 punnet chopped strawberries

1/2 cup frozen blueberries

1/2 cup frozen mixed berries

1/2 teaspoon caster sugar

Berry delicious pizza

Vanilla Mascarpone Topping:

100gm Mascarpone

1 teaspoon vanilla extract

1 Tablespoon icing sugar

Method:

Strawberry Jam Base

Spread the pizza base with strawberry jam.

Berry Pizza

Add the fruit to the base ensuring an even coverage.

Sprinkle the caster sugar over the fruit.

Bake at 220 degrees for 7 minutes.

Berry Delicious Pizza

Meanwhile mix the Vanilla Mascarpone ingredients together and set aside.

Remove the pizza from the oven and drop teaspoons of the mascarpone onto the pizza.

This is the most deliciously fresh tasting pizza, it is loaded with fruit and makes a really quick “special” breakfast. I usually serve it with more fresh strawberries and mascarpone.

Berry Delicious Breakfast Pizza competition

The Bakers Delight pizza base suited this pizza perfectly. I love that the pizza was ready for eating after only seven minutes cooking time.  This is a drastic reduction to the time it would usually take to cook pizza.

The fresh Bakers Delight Pizza Base lifted this pizza to a gourmet status. The fruit remained fresh and lush and the addition of the creamy vanilla mascarpone to the finished product was sublime.

If you would like to try a Bakers Delight Pizza base in the comfort of your own home I would you to share your pizza creation with me.  Use the comments section below to describe your perfect gourmet pizza. I would like to know what you would call your pizza plus, what type of sauce and toppings you would use.

LaKiss Jetty Pizzeria

LaKiss Jetty Pizzeria

Let’s give a big cheer! We have finally made it to Friday!!

Is it just me, or does the weekend seem to take forever to come around some weeks?

If you are planning to curl up on the lounge with a glass of wine or a beer this weekend, why not add a delicious gourmet pizza to the plan and call it the perfect night in.

I had been hearing some great reviews about the new local pizza place.  So last night I organized a group of 14 (including quite a large group of hungry kids) and we descended on the Pizzeria.  LaKiss Jetty Pizzeria opened in January this year and serves a range of tradition and gourmet pizza’s, pasta’s and breads.

LaKiss pizza shop

Our initial plans had been to order the pizza and eat it on the beach, but after a game of beach cricket we found the weather was turning a little cool.  We decided we would take advantage of the “dine in” option at LaKiss and dragged the troops up from the beach.

Jac & I were the first through the doors and we both just melted with the delicious homemade pizza aroma.  The smell took me right back to 20 years ago in Crown Street, Surry Hills when I used to get my Pizza’s from an Italian family business.

This is another family pizzeria owned by Paul & Katie a young husband and wife team.  Paulie is a big Lebanese guy who we watched spinning the dough like a pro in the newly opened business, Katie is a local girl who has been working in the hospitality industry in the Coffs Area.

Inside pizza oven

The story goes that right after their wedding Paul announced that 2010 was going to be the year of the pizza! Paul grew up in Sydney and had over a decade experience in Pizzeria and had always wanted to own his own shop.

After moving to Coffs Harbour in 2005, he realized there was a place here for some new tastes in Pizza, and he decided that one day he would be the man to deliver it to the locals.

Paul's experience resulted in the imaginative menu, and was mainly influenced by his own taste. He told me the nachos pizza came to him in a dream. He hates the mess of nachos and dreamed about the solution, he put his nachos on a pizza base.

Nachos Gourmet Pizza

I am certainly pleased he did.  The Nachos Pizza was one of the many delicious pizza’s I tried, and thoroughly enjoyed. It included corn chips smothered in a tasty chili con carne and served with sour cream and guacamole.

Perhaps I am getting ahead of myself; I should mention that the Pizzeria also has a selection of tempting “starter” pizza’s.  We ordered a Garlic Pizza Bread, Garlic and Cheese Pizza and I had to try the Olive & Feta Bread.

Olive tepanade & Feta Pizza

I was so impressed as I watched my bread being made, I love olive tapenade and lots of delicious tapenade was being spread liberally over the pizza base.  Ooh I was so in love with my pizza by this stage.  I turned my head as the olive oil was being liberally splash over the feta.  I figured that it won’t affect my waistline if I don’t see it going on.

Cheesy Garlic Pizza

When the starters arrived they were just as delicious as they looked.  I also tried the cheesey garlic bread and I was in heaven, the cheese was so deliciously garlicky and lush. Oh my god, I could have just eaten these, never mind the pizza! But with all the great smells it wasn’t going to be long before I was tempted away from my pizza bread.

Morrocan lamb pizza with labneh

The next pizza up was the Moroccan Lamb Pizza. Being Lebanese, Paul has always known labneh is the perfect accompaniment to lamb, so naturally the Moroccan lamb pizza is served with a delicious, creamy tangy labneh, roasted capsicum and baby spinach leaves. Marinating the lamb prior to cooking meant that the lamb was lusciously moist and full of flavour.

Smoked Salmon and ricotta pizza

The LaKiss menu reflects Paul’s belief that pizza isn’t bad for you. Using good quality healthy ingredients pizza can be a healthy family meal.  I ordered the Smoked Salmon pizza and I have to agree with Paul.  It was a gorgeous pizza with ricotta cheese, Spanish onion, lemon, capers and baby spinach. I would consider this a perfectly healthy dish, and soo good!

Potato and blue cheese pizza

Now as you all probably know I can’t go past blue cheese, I adore the creamy tang and I just crave it. I spotted a Pizza called the Blue Spud which includes potato chopped into matchstick, blue vein cheese, cracked pepper and fresh thyme. I just had to give that one a go as well.  My tummy space was running a little low by this stage but it was mouthwateringly delicious.

Potato & Blue cheese Pizza

I hadn’t quite eaten my body weight in pizza yet and everyone was raving over Jacqui Mexican pizza so I sat up a little straighter to make room for another slice and took the plunge.  Jacs pizza had more spice and kick than most Mexican pizza’s I’ve had which is why our table was enjoying it so much, it was just so tasty!

Mexican Pizza LaKiss

Paul & Katie said that so far the local favourites are the Moroccan Lamb, Nacho, the Jetty Super Special and Gourmet Vegetarian.  I a little embarrassed to say that I also had a few bites of hubby’s Jetty Super Special and it was exactly as the name suggests “Super Special”.

Jetty Super Special

I watched the Gourmet Vegetarian being made for another order and it will be high on my list of pizza to order next time.  This pizza includes eggplant, artichoke, sun dried tomato and feta cheese, YUMMY! You just can’t go wrong with this combination.

Papa Joe Pizza

We did also order a Papa Joe which is basically a meat lover’s pizza but I think it may have been demolished before I had a chance to grab a bite.  I have the photo as evidence that it was received but its stay with us was short lived.

Eating pizza at lakiss Coffs Harbour Pizza Pizza in coffs Harbour

LaKiss is BYO and has a great friendly atmosphere. Children are very much welcome, our six little monkeys were given colouring in to keep them amused while the pizza cooked, and the waitress was great bring jugs of water when the kids needed more.

Eating Pizza Coffs Harbour George eating pizza Pizza at Lakiss Jetty Coffs

I tried to get a general consensus on the two favourite pizza’s for the night. Most of the votes seemed to be for the Mexicana and the Nachos Pizza, but my favourites were the Smoked Salmon and the Moroccan Lamb.  The children polished off three Hawaiian pizzas between them, a fair effort given that the age range is 3 to 6 years.  So I think it is safe to say there is something on the menu for everyone.

Hawaiian Pizza Coffs

Katie tells me that diners are welcome to customize pizzas to their own tastes but I think we will be working our way though the menu before we start mixing things up.  There are so many great flavour combinations already.

LaKiss Pizzeria offers dine in, takeaway and home delivery, Tuesday though to Sunday. For orders or reservations Ph: 6652 1939.

Katie also mentioned a “stalkers special.” From time to time LaKiss will offer a special to their Facebook followers.  So follow the link and “Like” LaKiss Jetty Pizzeria.

Dragon Fruit La Kiss

At the end of the meal Paul brough out a delicious plate of Dragonfruit for the adults... maybe it was for the kids too but we weren't sharing too many peices.  (The kids were given their own little treat ;)  )

Hawaiian Pizza

Posted January 3, 2011

Hawaiian Pizza

With children home from school and an abundance of leftover ham from Christmas, I decided I would put both to work, and we would make Hawaiian Pizza’s for dinner.

Now I know everyone know what is on a Hawaiian Pizza but have you ever made one from scratch?  I make the pizza dough in my bread maker so it is very simple, yet the flavour is so much better than any base you can buy.  With the children “playing in” oh I mean kneading the dough it was an enjoyable exercise for all.

Hawaiian Pizza

I had a second reason for making a Hawaiian pizza, my lovely brother and he gorgeous bride-to-be gave me the most exciting birthday present, it was a pineapple corer. Take a whole pineapple and twist a few times and voila! Perfectly sliced and cored fruit.  Now I got a little carried away, and the fate of four pineapples was to become sweet little golden rings and now I needed to find a use for them. Hence, ham and pineapple pizza!

Ingredients:

5 Tbs Leggos stir through tomato and herb sauce

250gm Cheese grated

300gm ham diced

1 red onion sliced

1 pineapple chopped

Pizza Dough

500gm Bakers Flour

10gm yeast

5gm sugar

5gm salt

310 ml warm water

20ml oil

Method:

Throw all the dough ingredients into a bread maker and come back to it when the machine finishes. Too easy!

Lightly oil 5 pizza trays 20cm diameter. Divide the dough into five even balls.

Pizza dough

Flatten the dough ball into the pizza trays and allow them to proof again. Once they have proofed as desired they can be refrigerated for later use or topped with fillings immediately.

Preheat the oven to 220 degrees.

pizza bases

Spread the tomato paste over the bases and top with grated cheese.

pineapple slices

Add the onion, ham and pineapple and bake for approximately 10 mins.

Hawaiian Pizza

When the pizza's are ready the aroma is delicious, they may be a simple ham and pineapple pizza but they are so tasty and fun for everyone to make. The children always enjoy making their own food and it is much easier to get them to eat when they have had a hand in cooking the meal themselves.

Gourmet Pizza

di Lusso Estate Restaurant

Posted November 9, 2010

Wood Fired Pizza

Di Lusso Estate is dubbed “an Italian Experience, in the heart of Mudge.”  The vineyard specialized in producing wine made with traditional Italian grape varities such as Pinot Grigio, and Sangiovese.  The vineyard also continues the Italian tradition of growing figs and olives for use in cooking, on the table, and in condiments and oils.  These products are available to be tasted at the cellar door.

We were visiting di Lusso to experience the restaurants gourmet wood fired pizzas. We were pleased to notice a table at the lakes edge which was big enough to accommodate our large group.

We had a look over the menu and decided to order all five of the savoury pizzas. This way we could all have a slice of each pizza. I was pleased with the decision as I was struggling to choose just one pizza from the range.

Wine Bottles di Lusso

We intended to do a little wine tasting while we waited for the meal, and perhaps choose a bottle to enjoy over lunch.  Unfortunately the cellar door was busy the whole time!  We were unable to do more than sample the olive oils and figs which are available on a tasting table.

Our table by the lake was an ideal spot to watch the kids play bocce and run around on the grass. My curiosity got the better of me and I wandered over to where the pizzas were being made.  The set up was all outdoors so I watched the pizzas being topped and then loaded into the pizza oven. It was fascinating and it made me hungry all over again.

di Lusso

In addition to the pizza range there’s a menu which is changed weekly.  Two specials which caught my eye were the chicken roasted in tarragon and a pinot grigio wine sauce, and a chorizo and mushroom risotto.  I am pretty confident with our decision to order the wood fired pizza, the aroma while they were cooking was just magic.

di Lusso Restaurant

It wasn’t long before the pizzas started appearing on the table. They were each cut into six slices which suited our group perfectly. The first pizza I tried was the Quattro Fromaggi, or four cheese pizza. I took a deep breath in to inhale all the divine melted cheese smells. With my mouth watering I devoured the slice! It was the cheeseiest, tasties pizza ever! It reminded me straight away of the four cheese panini hubby and I shared in Paris a few years ago.  It’s funny how smells and tastes bring back such clear memories.

 Quattro Fromaggi

Once I emerged from my food daze I tried the anchovy and caper pizza with Italian parsely and mozzarella cheese.  It was another immediate favourite, a seafoody, salty and cheesey pizza full of flavour.

Anchovy Pizza

I shared my slice of Tuscan pizza with the kids. It was made with Tuscan salami, olives sundried tomato and mozzerella cheese.  I am always pleased that my kids will eat whatever we are having, it makes dining out much easier.

Tuscan Salami Pizza

The vegetable pizza relies on seasonal local produce and is another changing feature on the menu.  We enjoyed a pizza of roasted pumpkin, olives, zucchini, eggplant, cherry tomato and mozzarella cheese. This seemed to be a favourite pizza of the kids.

Spring Vegetable Pizza

I had been looking forward to trying the pear, proscuitto and gorgonzola pizza. I love strong cheese and I thought the combination sounded perfect.  Whilst the pizza was nice, it wasn’t quite what I had hoped. I couldn’t taste gorgonzola at all, and it seemed it had been given a sprinkle of parmesan instead.  As a result it was a little dry.

Pear and Gorgonzola Pizza

Not to be deterred we decided we would be able to manage one more pizza.  We ordered the dessert pizza special.  It featured apple and rhubarb with slivers of almond and Mudgee honey in a double cream. I have become a real fan of the dessert pizza lately.  This pizza was moist and lush with a beautiful fruity flavour and a great note to end our meal.

Apple and Rhuburb Pizza

We called the kids over to try a slice of the dessert pizza and it was devoured in seconds, so it is safe to say they gave it the big thumbs up also.

The kids continued to play bocce and the adults enjoyed a quiet moment relaxing by the lake.

Bocce di Lusso

Di Lusso Estate is located at 1094 Eurundee Lane, Mudgee.  It is open Mon- Fri from 9.00 – 5.00pm and from 10.00am -6.00pm on the weekend. For restaurant reservation phone: 02 6373 3125

Mixed Berry & Mascarpone Calzone

Posted October 12, 2010

Mixed Berry and Mascarpone Calzone

I have been slowly and quietly collecting pizza pans of all sizes. I started with the typical larger pans and over time my pans are getting smaller and smaller. The reason for the change is “The Gourmet Pizza.”  With individual pizza pans we can all make a pizza to suit our tastes.

Today I bought my smallest pizza pan yet it has a diameter of merely 15cm.  This purchase came about because I a wonderful pizza experience I had yesterday with a “dessert” pizza.  It was a Mixed Berry and Mascarpone Calzone and it was sublime. I know I will be exploring the world of dessert pizza’s, and the only problem with the one I made yesterday was that it was too big for one person.  I cut it into four serves but I think it would be far nicer as a petite, sweet individual calzone. The recipe below is for a 20cm pan as I am yet to make it in the smaller size.

I have to say a big thank you to my mother for keeping me with a regular supply of berries.

Pizza Dough

500gm Bakers Flour

10gm yeast

5gm sugar

5gm salt

310 ml warm water

20ml oil

Method:

Throw all the ingredients into a bread maker and come back to it when the machine finishes. Too easy!

Lightly oil 5 pizza trays 20cm diameter. Divide the dough into five even balls.

Flatten the dough ball into the pizza trays and allow them to proof again. Once they have proofed as desired they can be refrigerated for later use or topped with fillings immediately.

Pizza dough trays

Mixed Berry & Mascarpone Calzone Filling

250gm mascarpone

3 T/s icing sugar

40 gm melted butter

1 t/s vanilla bean paste

150gm raspberry

150gm chopped strawberry

150gm blueberry

10 t/s sugar

icing sugar to dust

Filling Calzone

Method:

Pre heat oven to 230 degrees with a pizza stone in place.

Combine the mascarpone with vanilla and icing sugar.  Set aside for later use.

Follow the dough method above and press the dough into the 20cm pizza pan and allow to proof as desired. Brush the dough with melted butter.

On a semi circle of the pizza place the mixture of the three types of berries and sprinkle 2 t/s of sugar over each calzone.

Add the mascarpone in dollops evenly over the fruit on each of the calzones.

Fold the Calzone over and seal the join by pressing edges firmly together.  Go around the edges with a fork and press again.

calzone

Use the remaining ½ t/s sugar to dust over the finished calzone.

Bake in the oven at 230 degrees for ten minutes, checking regularly.

Remove the calzone from the oven and dust with generous amounts of icing sugar.

Cookbook Challenge 47

Gourmet Pizza Pumpkin and Goats cheese

Week 47

Italian

The theme of my Cookbook challenge this week is Italian.  Immediately I thought about the beautiful gourmet pizza we have been making at home.  We have made so many tasty flavours it was difficult to decide on just a few to make for the challenge.  I need not have worried too much as I have completed this challenge three times without taking any photographs!!  Each time I have made them with different toppings, just as I am ready to photograph the pizza something has happened to stop me.  Either it is well past a meal time and the family is looking for dinner, or I just run out of time. Luckily pizza’s are very easy to make!

Gourmet Pizza

I am going to admit that I have been a bit slack.  The dough hasn't been hand kneaded. Making beautiful pizza is simple with a bread maker!  I love my bread maker! It gets used most days.  I make my pizza dough at the start of the day just by throwing the ingredients in and letting it do its’ thing, no kneading or warming and proofing, it is all automatic.

So for my final attempt at making, and photographing my gourmet pizza for the Italian Challenge I was lent this fantastic book by some friends.  It has the best topping suggestions.

Gourmet red centre Pizza

Finally I have completed the challenge and made the following pizza’s; Pumpkin and Goats Cheese with Thyme, then a  Pesto, Spinach and Feta with Sundried Tomato, a Garlic and Olive Bread and for dessert a sweet Mixed Berry & Mascarpone Calzone.

The pizza were all absolutely delicious… maybe the best yet.  The Mixed Berry Calzone is the nicest dessert I have tasted in a long time! Who would have thought a dessert pizza could be so yummy.

Pizza has become part of our outdoor way of life.  I am looking forward to the Spring and Summer weather when enjoy sitting outside with a bottle of wine in the company of friends.  Instead of these get together being all about the BBQ, our family is starting to alternate a bit more, and gourmet pizza’s have been added to the menu.

Calzone and pizza

With this in mind I have been looking at pizza ovens lately and wondering what people have thought of theirs??? What do you like about an outdoor pizza oven? Would you buy one? Let me know?

Have Your Say

I wish I had you for my mum when I was 5!

That cake would have been the talk of the town for the rest of the year - fantastic job.

A lot of your blogs will be interactively design and style that visitor share data to read your blog.

Thank you so much, it is going to be a wonderful surprise for my Mum, I wish everyone a great day with your own special people, those who helped you become who you are today.

Mum definitely deserves the hamper, because she is an amazing woman that has brought up 3 kids through tough times. She is the best mum a son could ask for.

She's had it tough, working hard
deserving much more than just a card
So let's raise a glass and toast her true
The best person in the world - Mum, that's you!

Thanks for the info on Rasa Malaysia's book. I used to visit her website for recipes but some time ago, igot a new PC and forgot to bookmark it!

You're too modest Julie! You did a great job with the cake! :D

Yellow strawberries and cream is just perfect for mum as a reward for putting up with two kids who were a pain in the bum.

I would have loved to have seen those martini glasses! Hope Miss A had a lovely time celebrating turning 5 :D

It shouldn't. It should go to me as whilst trying to make sure my mum, step-mum, MIL, Step-MIL, 3 x Grandmas are spoilt on Mother's Day, I always seem to get forgotten!

My poor old mum is battling to care for my step dad who has advanced Parkinsons. My real dad who has had a stroke still expects her to be there for him, my bro is going bankrupt and she lives two states away from her only gransdon. Her life has little joy- JUst wish for one thing nice to happen to her. We all love our mums, good luck to you all!

Perfect place to relax and forget about all the troubles we have in the city and just unwind ~ can't wait to go to somewhere like this hehe
