Thanks to everyone for such a great response to the Early Intervention High Tea & Fashion Parade fundraiser.  The event is going to be huge, and I am looking forward to devouring the delicious array of sweet and savoury dishes served throughout the afternoons events.

High Tea & Fashion Parade Coffs Harbour

I would love everyone to join Gourmet Getaways at the Early Intervention High Tea & Fashion Parade. The event is being held on Sunday 18th September at Novotel Pacific Bay Resort in Coffs Harbour.

Ladies will be treated to an exquisite high tea with delicious array of sweet and savoury dishes whilst enjoying a spectacular fashion parade.  Fashion retailers such as Nik & She, Inza, Sensara & Jacqui’s Shoe Boutique will be previewing their spring fashions on the catwalk.   Parry’s Jewellers will also be showcasing their funky Thomas Sabo range of jewelry.

This is going to be one of those great girly days. There will be a silent auction with an array of gorgeous items for ladies to bid on.  If you’re a little tired of this dreary weather then take a ticket in the main raffle. One lucky couple will win three nights accommodation at the Novotel Oasis Cairns including airfares from Brisbane to Cairns. I will certainly be buying up the tickets in that one!

On a serious note the event is being held to raise funds for Coffs Harbour’s Early Intervention Centre. Early Intervention is an organization which employs physiotherapists, occupational therapists, speech therapists and early childhood educators to assist children with developmental delays. The service is free to families, and provides concentrated need based therapy prior to school. This therapy assists children in reaching their full potential in life.

This is the second year that Deborah from Parry’s Jewellers has co-ordinated this great event. Tickets are $45 and can be purchased at any of the local businesses listed below.

Cookbook Challenge Spice Chai Madelines

The topic for this fortnights’ Cookbook Challenge is spice! I have had a few ideas’ rolling around in my head but I kept coming back to the spicy Chai flavours.  I wanted to use this flavour in a dessert similarly to last years White Chocolate and Chai Creme Brulee, but this year I was wanting something a little less rich... after all a girls got to look after her figure sometimes.

Chai Madelines High Tea

The epiphany came when I received an invitation to the Early Intervention High Tea & Fashion Parade. I instantly visualised a delicious Mini Chai Madeline dusted with a mixture of icing sugar and allspice. I am waiting for more details regarding High Tea before I officially extend the invitation to my readers, but please mark Sunday 18th September 2011 in your calendar.  Gourmet Getaways has reserved a table and I would love you all to join me, numbers will be limited.  I will also be announcing a competition to win a place at the Gourmet Getaway table, but more about that in a later post.

Chai Mini Madelines High Tea

Now to get your taste buds started, I would like to share a preview of one of the delicate morsels we may be served at the Early Intervention High Tea.

Chai Madelines

Ingredients:

Chai Infusion:

5 cloves

½ cinnamon stick

5 cardamom pods

1 star anise

½ nutmeg

1 cup water

Batter:

2 Eggs

2 Tbs caster sugar

2 Tbs icing sugar

1 tsp vanilla

¼ cup SR flour

¼ cup Plain flour

75gm melted butter

 Dusting:

1 Tbs icing sugar

1 tsp allspice

Chai Madelines

 Method:

Dry roast the spices until fragrant.

Dry roast chai spice mix Motar pestle chai blend

Micro plane the nutmeg into the mortar & pestle, then add the remaining spices. Pound spices until powdered.

Spiced Chai Boiling chai spice mix

Add 1 cup of water to a saucepan and simmer the spices in the water to infuse the flavour. The water needs to boil until only 1 – 2 Tbs of fluid remains.

Infusing Chai Tea

 Preheat the oven to 160 degrees and grease a mini Madeline tray. Mini Madeline tray will hold one teaspoon only.

Beat the eggs, caster sugar, icing sugar and vanilla in a mixing bowl until light and fluffy.

Madeline Batter

Strain the Chai infusion through a muslin cloth. Remove the spices squeezing the excess liquid from the cloth. You will only need 1 Tbs of the infusion for the Madelines.

Fold the sifted flours, butter and chai infusion through the egg mix carefully.

Madelines High Tea

Use a teaspoon to fill the Madeline tray.

Bake for 7-8 mins. Remove from the pan and cool on a wire rack.

Madelines Cooling

Combine the allspice and icing sugar and place into a sieve. Dust the Madelines with the mixture and serve.

Catching up on family gossip and taking some quiet time for a “nice cup of tea” was the order of the day today.  I have invited my mum to spend a few lazy hours on a Saturday afternoon sampling High Tea at Rendezvous Restaurant with me.

The décor, subdued lighting, and general atmosphere of Rendezvous is ideal for switching off and forgetting about the outside world, while you a waited on by the attentive staff. We are handed a menu which gives an elaborate description of quite a number of delicious sounding blends of tea.  There is also the choice of “high tea with a twist”.  The “twist” option adds a liqueur to the teapot which compliments your choice of blend.  All the lovely morsel which will be served as part of the set menu are listed and they sound perfect for our “girly outing”. 

 

The menu also explains the surprisingly poor origins of the high tea.  Apparently it was not a formal affair of the “well to do” as I had imaged based on the modern day interpretations, but something which has evolved from the poor working class in Britain.  The worker could only afford one solid meal per day being lunch. When they returned home hungry of an evening they would have tea and scraps, (leftovers of their lunch).  These little bits and pieces served with tea are what we have now adapted to “High Tea”

 

The choice of tea is something quite extraordinary and after quite a lot of agonizing I decide on the Madagascan Vanilla Tea, my mother chose the Crème Brulee option and we settled down to a chat while our platters of food were prepared.  

When the tea arrives the aroma is quite definitely floral and vanilla as described. I am surprised by how nice it tastes and I am sold on the experience already. I will be searching for the tea online tonight.  The beautiful platters of food follow shortly afterwards and the ohh’s and ahh’s started in earnest.

 

We decided that we would begin with the warm savouries and the mini Salmon Quiche was my first choice, mum started with the amazingly, creamy Pumpkin Frittata. Each of the mini lovelies on this serving tier were provided in multiples of two, so there was no splitting required.  We enjoyed every crumb of our first two dishes and I have to say they were my favourites for the afternoon.  Next we tried the scones, first the savoury parsley and chive scone, which was so light and buttery with a clean fresh herby flavour, absolutely delicious.  Then I had the cutest little choc chip scone with raspberry jam.

 

Mum and I had a brief rest from sampling to chat and order more tea.  I would have liked the tea to be refilled as part of the experience but regardless I was happy to order a second pot.

 

We moved onto the tiny sandwiches served in the traditional elegant manner of pin wheel and mini rectangles. The fillings were also quite traditional, with egg, tomato, chicken and cucumber being the four varieties on offer.

 

Next we moved onto the top tier which was the sweet finale to our formal tea experience.  These were by far the most delectable looking treats.  We had little Angel Cakes with an amazing Caramel Crème Filling, mini Lemon Curd Tart, Raspberry Tart, Chocolate Rum Pudding Truffle, and a Chocolate Caramel and Almond Meal Tart.  I was tempted to marvel over these beautifully presented mini desserts but the thought of tasting them was just too much, they disappeared in a flash.  Our tummies groaned when we finished, we had probably over indulged but we loved every mouthful.  

I thoroughly enjoyed my High Tea experience, the setting was ideal, the staff provided the perfect high tea service, the food was divine and plentiful, (we didn’t make it through the last two scones). The tea was a highlight for me as most of the blends on offer I had not seen elsewhere. 

High Tea is held each Saturday, between 12.00 to 3.00pm, bookings are essential.  The cost is $25 per person or $35 for “High Tea with a Twist”

 

On Saturday 19th June, as part of “Australia’s Biggest Morning Tea” Rendezvous will be hosting a special High Tea experience as a Cancer Council Fundraiser.  The cost to be part of this special High Tea will be $30 per person or $40 for “High Tea with a Twist” Rendezvous will donate $10 for each customer to the Cancer Council.

Yellow strawberries and cream is just perfect for mum as a reward for putting up with two kids who were a pain in the bum.

It shouldn't. It should go to me as whilst trying to make sure my mum, step-mum, MIL, Step-MIL, 3 x Grandmas are spoilt on Mother's Day, I always seem to get forgotten!

My poor old mum is battling to care for my step dad who has advanced Parkinsons. My real dad who has had a stroke still expects her to be there for him, my bro is going bankrupt and she lives two states away from her only gransdon. Her life has little joy- JUst wish for one thing nice to happen to her. We all love our mums, good luck to you all!

Perfect place to relax and forget about all the troubles we have in the city and just unwind ~ can't wait to go to somewhere like this hehe
