Hawaiian Pizza

With children home from school and an abundance of leftover ham from Christmas, I decided I would put both to work, and we would make Hawaiian Pizza’s for dinner.
Now I know everyone know what is on a Hawaiian Pizza but have you ever made one from scratch? I make the pizza dough in my bread maker so it is very simple, yet the flavour is so much better than any base you can buy. With the children “playing in” oh I mean kneading the dough it was an enjoyable exercise for all.

I had a second reason for making a Hawaiian pizza, my lovely brother and he gorgeous bride-to-be gave me the most exciting birthday present, it was a pineapple corer. Take a whole pineapple and twist a few times and voila! Perfectly sliced and cored fruit. Now I got a little carried away, and the fate of four pineapples was to become sweet little golden rings and now I needed to find a use for them. Hence, ham and pineapple pizza!
Ingredients:
5 Tbs Leggos stir through tomato and herb sauce
250gm Cheese grated
300gm ham diced
1 red onion sliced
1 pineapple chopped
Pizza Dough
500gm Bakers Flour
10gm yeast
5gm sugar
5gm salt
310 ml warm water
20ml oil
Method:
Throw all the dough ingredients into a bread maker and come back to it when the machine finishes. Too easy!
Lightly oil 5 pizza trays 20cm diameter. Divide the dough into five even balls.

Flatten the dough ball into the pizza trays and allow them to proof again. Once they have proofed as desired they can be refrigerated for later use or topped with fillings immediately.
Preheat the oven to 220 degrees.

Spread the tomato paste over the bases and top with grated cheese.

Add the onion, ham and pineapple and bake for approximately 10 mins.

When the pizza's are ready the aroma is delicious, they may be a simple ham and pineapple pizza but they are so tasty and fun for everyone to make. The children always enjoy making their own food and it is much easier to get them to eat when they have had a hand in cooking the meal themselves.

White Chocolate Rocky Road

“Little A” thought all her dreams had come true when I told her we would be making a Christmas “Rocky Road”. She wasn’t quite sure what Rocky Road was, but she soon decided it was going to be pretty good by the bags of lollies I was getting down from the top shelf of the pantry.
It was so much fun to make this treat with her, because she didn’t need a lot of help to get results that she was thrilled with. I made the cups from a little melted chocolate as a finishing touch.

Ingredients:
2 x 220gm Dream white chocolate
1/3 cup coconut
85gm natural pistachio nuts
200gm raspberry lollies
250gm marshmallow cut in half
150gm milk chocolate
Method:
Line a metal tray with folded aluminum foil.
In a bowl combine coconut, nuts, lollies and marshmallows. In a glass bowl melt the white chocolate using short bursts of a microwave.

Pour the melted chocolate over the lolly mixture and combine well.

Pour the rocky road into the prepared tin and push all the ingredients down firmly. Refrigerate until set. Cut into squares.

Melt milk chocolate in the microwave. Using silicone cup cake moulds, brush the mould with chocolate and refrigerate. Repeat brushing chocolate on the moulds and refrigerating until the mould is thick with chocolate.
Turn the chocolate out of mould and fill with the rocky road.

Kids In The Kitchen

As it is still school holidays here, I thought I might do an article on “kids in the kitchen.” I feel very fortunate to have always been allowed into the kitchen as a child. Whether at my nan’s house or at home I was always “helping” with the cooking. Mostly by licking the beaters, but also making biscuits and cakes. I would flick through the recipe books and choose the most delicious looking treat I could find and then ask to cook it.

I had an exceptionally patient nan, who always made sure the pantry was well stocked for my visits, and I can honestly say I learnt fractions, measurements and telling the time through my cooking adventures. After all it was a necessity, no 5 year old wants their cupcakes in the oven for a second longer than required!

As I got older my mum soon realized that if the ingredients were on hand I would make cakes and snacks for school lunches.
Through out the years I have continued to enjoy my time in the kitchen and I have always been surprised when adults dislike cooking, or worse still, can’t cook. I don’t know if it is my love of food that makes me enjoy cooking, or my love of cooking which makes me appreciate beautiful food, but either way I have made sure that I share this love with my children.

Meals are an important time to be shared with family, friends and the children’s friends. With our busy lives these days it can be hard to find face to face time but I do believe it is a worthwhile investment. In our house more times than not, by the end of the week, each family member has contributed to an evenings meal.

Icing Cupcakes
I am so pleased there has been a resurgence in home cooking, and kids in the kitchen. Cooking show such as Masterchef have got people pushing culinary boundaries in their homes, and thinking about what they are preparing for the family. TV chefs such a Jamie Oliver also have us considering the produce we are using, and the benefits of fresh local foods and kitchen gardens.

Cooking and food appreciation is a skill which we can teach our children. I am pleased to say I have completely self sufficient 15 and 13 year old boys. They can look into the fridge and create a meal from scratch, follow a recipe and not burn the house down. That, to me is a win!

The Finished Cupcake
We also have 3 and 5 year olds who love cooking and will run to the kitchen if they hear the drawers rattle. Obviously it is not all fun and games when you have little “helpers.” Week nights the aim is just to get dinner on the table as quickly as possible and help is not always the most efficient way to achieve this outcome. When it is all said and done though the family that eats together (cooks together) stays together. Here is an interesting article I found.

Measure & Stir Childrens Recipe Below
Some tips I have found useful when cooking with little ones;
Choose dishes which are easy when they first start learning to cook.
Let the children choose between a few dishes which you have checked for safety and ease of preparation.
Choose between dishes with a picture so they can understand what they are making and be excited.
Little ones get bored quickly so bear this in mind when choosing the dish.
Choose dishes they love to eat, the finished product is then more satisfying as being worth the effort.
Choose a convenient time of day, when kids are not tired and you are not in a hurry.
When cooking with very little children, do all the measuring, preparation, and chopping prior to calling them into the kitchen to start cooking. This will ensure you do not need to leave them while you fetch ingredients, it will be a more pleasant experience for everyone. It is what I call “setting them up to succeed.”

Chopped and Prepped Pizza Ingredients
Forget about the mess they are making, and don’t worry about what the finished product looks like.
Have fun, and make sure they have fun.
Licking the bowl is a must, and the beaters and any spoon that has even gone near the batter, after all, this is what it is all about!
Finally, below is a recipe for a very simple measure and stir cupcake batter.

Ingredients:
1 cup SR flour
¾ cup sugar
60gm butter melted
60ml milk
2 eggs
1 t/spoon vanilla extract
Method:
Pre measure all the ingredients and place on the bench.
Preheat the oven to 170 degrees.
Help your child place cupcake wrappers in the baking tray.
Ask your child to place dry ingredients into a mixing bowl and stir to combine.
Ask your child to pour all the wet ingredients into a plastic jug, stir to combine.
Have your child pour the jug of wet ingredients into the bowl of dry ingredients. Stir until combined.
Using a teaspoon, place the mixture into cupcake papers. If this is too difficult after the child has helped with a few cupcakes, ask them if they would now like to lick the spoon while you finish the job.

Yellow strawberries and cream is just perfect for mum as a reward for putting up with two kids who were a pain in the bum.

It shouldn't. It should go to me as whilst trying to make sure my mum, step-mum, MIL, Step-MIL, 3 x Grandmas are spoilt on Mother's Day, I always seem to get forgotten!
My poor old mum is battling to care for my step dad who has advanced Parkinsons. My real dad who has had a stroke still expects her to be there for him, my bro is going bankrupt and she lives two states away from her only gransdon. Her life has little joy- JUst wish for one thing nice to happen to her. We all love our mums, good luck to you all!
