I’m so excited to be sharing this recipe today. A few weeks ago I tried a raw, vegan cheesecake at You & Bamboo. The dessert was a revelation! A complete game changer for me.

I love cheesecake, (and just about every other dessert), but this was different. Instead of being heavy on my stomach and overly sweet, it was light and nutrient rich. I actually felt better for having eaten the treat.

Treat is the operative word. The dessert is still calorie dense but at least while you indulge you are also consuming a good dose of fibre, protein, iron, magnesium, B group vitamins, vitamin C and antioxidants.

Raw Strawberry Cheesecake

I bet you are wondering how it can possibly taste like a creamy cheesecake. The dessert uses soaked, raw cashews. When the cashews are blended they become light and fluffy, mimicking the texture of cheesecake. The cashew filling has little flavour so it takes on the flavour of whatever is added. When I think of cheesecake it’s the texture and lemon zing that gets me in so this one has the juice of a lemon from our garden.

As I sat in You & Bamboo enjoying the original raw cheesecake, I knew my challenge would be to recreate the dish.  So as I savoured each mouthful I tried to guess the ingredients. Once we were home I went to work trying to mimick the cheesecake. I wanted something similar in texture, but with more of a festive, Christmas feel. So below I give you my Vegan Strawberry Cheesecake. A Gluten Free, Vegan, raw dessert.

Vegan Strawberry Cheesecake

Creamy no bake cheesecake full of healthy goodness. The quickest vegan, raw strawberry cheesecake. Ingredients

Ingredients

    Base
  • 8 medjool dates
  • 1 cups coconut
  • 1 cups walnuts
  • zest from 1 lemon
  • Filling
  • 2 cups raw cashew
  • 4 cups warm water
  • lemon juice (1 lemon)
  • 1/2 cup coconut nectar
  • 1/2 cup coconut oil
  • Topping
  • 2 punnets of berries
  • 3 Tbs coconut nectar
  • 3 Tbs Coconut oil

Instructions

    Base
  1. Place all the base ingredients into a food processor and process until the mixture forms a sticky ball.
  2. Press the base into silicone moulds. (There is no need to grease or line the moulds.)
  3. Filing
  4. Soak the cashews in warm water and leave for at least 2 hours.
  5. Drain the cashews and place in a food processor with coconut oil, coconut nectar, and lemon juice. Process the filling until it is smooth, light and creamy. You may need to scrape the sides down a few times.
  6. Pour the filling over the bases and place in the freezer to set.
  7. Topping
  8. Place the berries, coconut oil and coconut nectar in the food processors and combine until the desired consistancy has been reached.
  9. Spoon the topping over the filling and return to the freezer to set.

 Voila I bring you my vegan strawberry cheesecake!  I think it would make a nice addition to the Christmas dessert table garnished with the gorgeous berries that are available at the moment.  Make sure you book mark or pin as this is a simple and quick recipe as it caters to many different diet.
